what is it?
From day one at Cool Cousin we’ve approached brewing from a raw perspective.
With no prior brewing experience, and armed only with his love of lager and an insatiable curiosity, our co-founder John Midgley was determined to make something better. Better tasting, and better for the environment.
This led to a breakthrough family of beers we like to describe as ‘raw’.
‘Raw’ because they’re made using 100% raw barley in its natural unprocessed state – bypassing the traditional malting process by using the power of enzymes to conserve both water and energy.
What’s cool
about using 100%
raw barley?
Unlike malted barley, raw barley comes directly from a farmer’s field into our brewery. That’s one less journey and a whole lot of processing skipped. By skipping the malting process, we are able to save 350ml of water and 16g of CO2 per pint of beer served!!
If you imagine every pint in America was brewed our way that would mean a saving of 15 billion liters of water and 720 Million kilograms of CO2 per year!
Now that would be cool!

Enzymes exist everywhere in nature, from our mouths to the cells in our body. And they’ve been a natural part of brewing in some form for thousands of years. But the coolest thing about our modern-day enzymes is that we can add them to accelerate our brewing process - making it more eco-friendly, without compromising the quality or flavor of our beers.

By omitting the malting of barley, through the use of modern enzymes, the Cool Cousin process saves energy, and lots of water amounting to less CO2 emissions.
